  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 cups fresh peaches, diced
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients.
  7. Fold in diced peaches.
  8. Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  9. Let the cake cool completely before frosting.
  10. For the frosting, beat cream cheese and butter until smooth.
  11. Gradually add powdered sugar and vanilla, beating until creamy.
  12. Spread frosting over the cooled cake.
