- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened

- 1 cup buttermilk
- 1 tsp vanilla extract

- 2 cups fresh peaches, diced
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients.
- Fold in diced peaches.
- Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let the cake cool completely before frosting.
- For the frosting, beat cream cheese and butter until smooth.
- Gradually add powdered sugar and vanilla, beating until creamy.
- Spread frosting over the cooled cake.
