- 2 beef steaks (sirloin or ribeye)
- 1 tbsp whole black peppercorns
- 1 tbsp butter
- 1 tbsp olive oil
- 1/2 cup heavy cream
- 1/4 cup beef broth
- 1 tbsp Dijon mustard
- 1 small shallot, minced
- Salt to taste
Instructions
- Crush the peppercorns coarsely.
- Season the steaks with salt.
- Heat olive oil in a pan over medium-high heat.
- Cook the steaks for 3-4 minutes per side for medium-rare.
- Remove the steaks and set aside.
- In the same pan, melt butter and sauté shallots.
- Add crushed peppercorns and cook for 1 minute.
- Pour in beef broth and scrape the pan.
- Stir in heavy cream and Dijon mustard.
- Simmer until the sauce thickens.
- Return the steaks to the pan and coat with sauce.
- Serve hot.
