Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
- In a large bowl, mix flour, sugar, baking soda, and salt.
- Add crushed pineapple (with juice), vegetable oil, eggs, and vanilla extract. Stir until well combined.
- Fold in shredded coconut if using.
- Pour the batter into the prepared pan.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let the cake cool before serving.
