Ingredients

- 2 cups cooked chicken, shredded
- 1 cup cottage cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1 tsp cumin
- 1 tsp garlic powder
- 6 low-carb tortillas
- 1 cup enchilada sauce
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 375°F (190°C).
- Mix chicken, cottage cheese, cheddar, green onions, cumin, and garlic powder in a bowl.
- Fill each tortilla with the mixture and roll tightly.
- Place enchiladas seam-side down in a baking dish.
- Pour enchilada sauce over the top.
- Bake for 20 minutes until heated through.
- Garnish with cilantro before serving.

- Substitute mozzarella for cheddar if preferred.
