Ingredients

  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 6 low-carb tortillas
  • 1 cup enchilada sauce
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix chicken, cottage cheese, cheddar, green onions, cumin, and garlic powder in a bowl.
  3. Fill each tortilla with the mixture and roll tightly.
  4. Place enchiladas seam-side down in a baking dish.
