  • 1 cup pumpkin puree

  • 2 eggs
  • 1 cup sugar
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg yolk

Instructions

  1. Preheat oven to 375°F. Line muffin tin with paper liners.
  2. Mix flour, baking soda, salt, cinnamon, nutmeg, and cloves in a bowl.
  3. In another bowl, whisk pumpkin puree, oil, eggs, and sugar.
  4. Combine wet and dry ingredients until just mixed.
  5. Beat cream cheese, sugar, and egg yolk until smooth.
  6. Fill muffin cups halfway with batter. Add a spoonful of cream cheese mixture.
  7. Top with remaining batter.
  8. Bake for 20-25 minutes until a toothpick comes out clean.
  9. Cool before serving.
