  • 4 celery stalks, sliced

  • 2 cups red wine
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F.
  2. Season the beef with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium-high heat.
  4. Sear the beef on all sides until browned, then remove.
  5. Add onion, carrots, celery, and garlic to the pot. Cook until softened.
  6. Stir in red wine, beef broth, tomato paste, thyme, and rosemary.
  7. Return the beef to the pot and bring to a simmer.
