Ingredients

- 3 lbs beef chuck roast
- 2 tbsp olive oil
- 1 large onion, chopped
- 4 carrots, sliced
- 4 celery stalks, sliced
- 4 garlic cloves, minced
- 2 cups red wine
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F.
- Season the beef with salt and pepper.
- Heat olive oil in a Dutch oven over medium-high heat.
- Sear the beef on all sides until browned, then remove.
- Add onion, carrots, celery, and garlic to the pot. Cook until softened.
- Stir in red wine, beef broth, tomato paste, thyme, and rosemary.
- Return the beef to the pot and bring to a simmer.
- Cover and transfer to the oven. Cook for 3 hours until tender.
- Remove from oven and let rest for 10 minutes before slicing.

- Use a good-quality red wine for best flavor.
- You can add potatoes if desired.
