Ingredients

  • 1 cup corned beef, finely chopped
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1 cup breadcrumbs
  • 1 egg, beaten
  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp horseradish
  • 1 tsp hot sauce
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix corned beef, sauerkraut, Swiss cheese, and half of the breadcrumbs.
  3. Shape the mixture into small balls.
  4. Dip each ball in the beaten egg, then roll in the remaining breadcrumbs.
  5. Place the balls on a baking sheet and drizzle with olive oil.
  6. Bake for 15-20 minutes until golden brown.
  7. While baking, mix mayonnaise, ketchup, horseradish, hot sauce, paprika, garlic powder, and onion powder to make the dipping sauce.
  8. Serve the reuben balls warm with the spicy thousand island dipping sauce.
