Ingredients

- 1 cup rice
- 1 can black beans, drained
- 2 medium sweet potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp olive oil
- 1 cup vegetable broth
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a pan and sauté onion and garlic.
- Add sweet potatoes, cumin, and paprika. Cook for 5 minutes.
- Stir in rice, beans, and vegetable broth. Bring to a boil.
- Transfer to a baking dish and bake for 25 minutes.
- Let cool slightly before serving.
Notes
- You can substitute black beans with kidney beans.
- Add chili flakes for extra heat.
