Ingredients

  • 1 cup rice
  • 1 can black beans, drained
  • 2 medium sweet potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 1 cup vegetable broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a pan and sauté onion and garlic.
  3. Add sweet potatoes, cumin, and paprika. Cook for 5 minutes.
  4. Stir in rice, beans, and vegetable broth. Bring to a boil.
  5. Transfer to a baking dish and bake for 25 minutes.
  6. Let cool slightly before serving.
