- 1 medium butternut squash, peeled and cubed
- 1/2 cup dried cranberries
- 1/2 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- Toss cubed butternut squash with olive oil, salt, pepper, and thyme.
- Spread squash on a baking sheet and roast for 25 minutes.
- Add cranberries and roast for 10 more minutes.
- Remove from oven and sprinkle with feta cheese.
- Serve warm.
Notes
- Use fresh cranberries if available.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
