Ingredients

  • 1/2 cup dried cranberries

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cubed butternut squash with olive oil, salt, pepper, and thyme.
  3. Spread squash on a baking sheet and roast for 25 minutes.
  4. Add cranberries and roast for 10 more minutes.
  5. Remove from oven and sprinkle with feta cheese.
