Description

Juicy chicken breasts stuffed with roasted red peppers, spinach, and melted mozzarella cheese, baked to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, drained and chopped
  • 1 cup fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast, being careful not to cut all the way through.
  3. In a bowl, mix roasted red peppers, spinach, and mozzarella cheese.
  4. Stuff each chicken breast with the mixture and secure with toothpicks.
  5. Season the outside with garlic powder, oregano, salt, and pepper.
  6. Heat olive oil in a skillet over medium-high heat.
  7. Sear chicken for 2-3 minutes per side until golden brown.
  8. Transfer to a baking dish and bake for 20-25 minutes or until chicken reaches 165°F (74°C) internally.
  9. Let rest for 5 minutes before serving.
