- 1 cup quinoa
- 2 cups vegetable broth

- 1 cup cherry tomatoes, halved
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese (optional)
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring the vegetable broth to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes.
- Heat olive oil in a pan over medium heat. Add onion and garlic, sauté until soft.
- Add bell pepper and zucchini to the pan. Cook for 5 minutes.
- Stir in cherry tomatoes, basil, oregano, salt, and pepper. Cook for another 3 minutes.
- Fluff the quinoa with a fork and mix it with the vegetables.
- Serve warm, topped with Parmesan cheese if desired.
