  • 4 medium potatoes, diced
  • 2 large carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tbsp olive oil

  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown chicken thighs on both sides, then remove and set aside.
  3. Sauté onions and garlic until softened.
  4. Add potatoes, carrots, thyme, and rosemary. Stir well.
