Ingredients

- 2 lbs chicken thighs, bone-in
- 4 medium potatoes, diced
- 2 large carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 tbsp olive oil
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown chicken thighs on both sides, then remove and set aside.
- Sauté onions and garlic until softened.
- Add potatoes, carrots, thyme, and rosemary. Stir well.
- Return chicken to the pot and pour in chicken broth.
- Simmer covered for 30 minutes or until chicken is cooked through.
- Season with salt and pepper before serving.
Notes
- For extra flavor, sear the chicken skin-side first.
- You can substitute sweet potatoes for a different taste.
- Leftovers taste even better the next day.
