Ingredients

- 2 lbs chicken thighs, bone-in and skin-on
- 4 medium potatoes, peeled and cubed
- 3 carrots, peeled and sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken thighs with salt and pepper, then brown them in the pot for 5 minutes per side. Remove and set aside.
- Add onion and garlic to the pot, sauté until softened.
- Stir in potatoes and carrots, cook for 3 minutes.
- Return chicken to the pot, add chicken broth, thyme, rosemary, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes until chicken is cooked and vegetables are tender.
- Remove bay leaf, adjust seasoning, and serve hot.
Notes
- Use bone-in chicken for richer flavor.
- Add more broth if you prefer a thinner stew.
- Fresh herbs can replace dried ones for a brighter taste.
