Ingredients

  • 2 lbs chicken thighs, bone-in and skin-on
  • 4 medium potatoes, peeled and cubed
  • 3 carrots, peeled and sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken thighs with salt and pepper, then brown them in the pot for 5 minutes per side. Remove and set aside.
  3. Add onion and garlic to the pot, sauté until softened.
  4. Stir in potatoes and carrots, cook for 3 minutes.
  5. Return chicken to the pot, add chicken broth, thyme, rosemary, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes until chicken is cooked and vegetables are tender.
  7. Remove bay leaf, adjust seasoning, and serve hot.

Notes

  • Use bone-in chicken for richer flavor.
  • Add more broth if you prefer a thinner stew.
