- 2 tbsp olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp chili flakes (optional)
- 1 can (400g) crushed tomatoes
- 1/2 cup pitted olives, sliced
- 100g feta cheese, crumbled
- 4 eggs
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper. Cook until softened (about 5 minutes).
- Stir in garlic, cumin, paprika, and chili flakes. Cook for 1 minute.
- Pour in crushed tomatoes and simmer for 10 minutes.
- Add olives and crumbled feta. Stir gently.
- Make small wells in the sauce and the eggs into them.
- Cover and cook until eggs are set (about 5-7 minutes).
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
