Ingredients

- 4 boneless, skinless chicken breasts
- 4 medium potatoes, cubed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with 1 tbsp olive oil, salt, pepper, garlic powder, and paprika.
- Spread potatoes on a sheet pan in a single layer.
- Roast for 20 minutes.
- While potatoes roast, coat chicken with remaining olive oil, salt, pepper, and thyme.
- Remove pan from oven, push potatoes to one side, and add chicken.
- Return to oven and bake for 20-25 minutes until chicken reaches 165°F (74°C).
- Serve hot.

- Cut potatoes evenly for even cooking.
- Use a meat thermometer to check chicken doneness.
