- 2 boneless, skinless chicken breasts
- 1 can (15 oz) whole kernel corn, drained
- 1 can (15 oz) cream-style corn
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 tbsp cornstarch (optional, for thickening)
- 2 tbsp water (optional, for thickening)
Instructions
- Place chicken breasts, corn, onion, garlic, broth, salt, pepper, and thyme in the slow cooker.
- Cover and cook on low for 6 hours or high for 3 hours.
- Remove chicken and shred it using two forks.
- Return shredded chicken to the slow cooker.
- Stir in heavy cream.
- For a thicker soup, mix cornstarch and water in a small bowl, then stir into the soup.
- Cover and cook for an additional 15 minutes.
- Serve hot.
Notes
- Use rotisserie chicken to save time.
- Add diced carrots or celery for extra vegetables.
