  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 tbsp cornstarch (optional, for thickening)
  • 2 tbsp water (optional, for thickening)

Instructions

  1. Place chicken breasts, corn, onion, garlic, broth, salt, pepper, and thyme in the slow cooker.
  2. Cover and cook on low for 6 hours or high for 3 hours.
  3. Remove chicken and shred it using two forks.
  4. Return shredded chicken to the slow cooker.
  5. Stir in heavy cream.
  6. For a thicker soup, mix cornstarch and water in a small bowl, then stir into the soup.
  7. Cover and cook for an additional 15 minutes.
  8. Serve hot.
