- 1 lb cheese tortellini
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 can (14.5 oz) diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
Instructions
- Add vegetable broth, diced tomatoes, onion, garlic, basil, oregano, salt, and pepper to the slow cooker.
- Cover and cook on low for 6 hours or high for 3 hours.
- Stir in tortellini, heavy cream, and spinach. Cook for an additional 30 minutes on high.
- Top with grated Parmesan cheese before serving.
Notes
- Use fresh or frozen tortellini for best results.
- For a lighter version, substitute half-and-half for heavy cream.
- Add cooked chicken or sausage for extra protein.
