A hearty and flavorful Tex-Mex taco soup made easy in your slow cooker.
Ingredients

- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chiles
- 1 can (8 oz) tomato sauce
- 2 cups beef broth
- 1 packet taco seasoning
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Transfer the beef to the slow cooker.
- Add onion, bell pepper, black beans, corn, diced tomatoes, tomato sauce, beef broth, taco seasoning, cumin, and chili powder.
- Stir well to combine.
- Cook on low for 6 hours or high for 3 hours.
- Season with salt and pepper to taste before serving.
Notes
- Top with shredded cheese, sour cream, and chopped cilantro.
- Serve with tortilla chips or warm tortillas.
- Leftovers can be stored in the fridge for up to 3 days.
