A delicious twist on classic snickerdoodle cookies combined with spiced apple pie filling, perfect for fall.

- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 2 tsp vanilla extract
- 2 medium apples, peeled and diced
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tbsp sugar (for topping)
- 1 tsp cinnamon (for topping)
Instructions
- Preheat oven to 350°F. Grease a 9×9-inch baking pan.
- In a bowl, mix flour, sugar, baking powder, and salt.
- Cut in butter until mixture resembles coarse crumbs.
- Stir in egg and vanilla until dough forms.
- Press half the dough into the prepared pan.
- In another bowl, toss apples with cinnamon and nutmeg. Spread over dough.
- Top with remaining dough, pressing lightly.
- Mix 1 tbsp sugar and 1 tsp cinnamon. Sprinkle over the top.
- Bake for 35-40 minutes or until golden brown.
- Cool before cutting into bars.
Notes
- Use firm apples like Granny Smith for best texture.
- Store in an airtight container for up to 3 days.
- For extra flavor, add a pinch of cloves to the apple mixture.
