Ingredients

- 4 medium green tomatoes
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 eggs
- 1/4 cup milk
- 1 cup cornmeal
- 1/2 cup vegetable oil
Instructions
- Slice tomatoes into 1/4-inch thick rounds.
- Mix flour, salt, pepper, paprika, and garlic powder in a shallow bowl.
- Whisk eggs and milk in another bowl.
- Place cornmeal in a third bowl.
- Dredge tomato slices in flour mixture, dip in egg mixture, then coat with cornmeal.
- Heat oil in a skillet over medium heat.
- Fry tomatoes in batches until golden brown, about 2-3 minutes per side.
- Drain on paper towels and serve warm.
Notes
- Use firm green tomatoes for best results.
- Adjust seasoning to taste.
- Serve with remoulade or ranch dressing.
