Ingredients

- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup heavy cream
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- 2 cups pecan halves
- 1/4 tsp salt
Instructions
- Line a baking sheet with parchment paper.
- In a saucepan, combine granulated sugar, brown sugar, heavy cream, and butter.
- Cook over medium heat, stirring constantly until sugars dissolve.
- Bring to a boil and cook until mixture reaches 240°F (soft-ball stage).
- Remove from heat and stir in vanilla, pecans, and salt.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Let cool completely before serving.

- Use a candy thermometer for accurate temperature.
- Store in an airtight container for up to a week.
- For extra crunch, toast pecans before using.
