A flavorful and spicy soup with red curry and wontons.
Ingredients

- 1 tbsp red curry paste
- 2 cups chicken broth
- 1 cup coconut milk
- 12 wontons
- 1 tbsp fish sauce
- 1 tsp sugar
- 1 lime, juiced
- 1/2 cup sliced mushrooms
- 1/4 cup chopped cilantro
Instructions
- Heat the red curry paste in a pot over medium heat.
- Add chicken broth and coconut milk, stir well.
- Bring to a simmer, then add wontons and mushrooms.
- Cook for 5 minutes until wontons are tender.
- Stir in fish sauce, sugar, and lime juice.
- Garnish with cilantro before serving.
Notes
- Adjust spice level by adding more or less curry paste.
- Use vegetable broth for a vegetarian version.
- Store leftovers in the fridge for up to 2 days.
