- 8 cups mixed salad greens (spinach, arugula, romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced almonds
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Wash and dry all vegetables and greens.
- In a large bowl, combine salad greens, cherry tomatoes, cucumber, bell pepper, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to coat.
- Sprinkle feta cheese and sliced almonds on top.
- Serve immediately.

- For extra crunch, add toasted sunflower seeds.
- Make the dressing ahead and store it in the fridge.
