- 1 cup strong coffee, cooled
- 16 oz mascarpone cheese
- 1/2 cup sugar
- 2 eggs, separated
- 1 tsp vanilla extract
- 1 cup fresh berries
- 2 tbsp cocoa powder
Instructions
- Beat egg yolks with sugar until pale and creamy.
- Add mascarpone and vanilla, mix until smooth.
- In a separate bowl, whip egg whites to stiff peaks.
- Gently fold egg whites into mascarpone mixture.
- Dip ladyfingers in coffee briefly, then layer in dish.
- Spread half the mascarpone mixture over ladyfingers.
- Repeat layers, ending with mascarpone.
- Chill for at least 4 hours.
- Top with berries and dust with cocoa before serving.
