Description

Ingredients

  • 500g fresh strawberries
  • 500ml heavy cream
  • 4 egg yolks
  • 100g sugar
  • 1 tsp vanilla extract
  • 2 tsp gelatin (optional)

Instructions

  1. Line a charlotte mold with sponge cake fingers.
  2. Slice strawberries and arrange a layer inside the mold.
  3. Whip the heavy cream until stiff peaks form.
  4. Whisk egg yolks with sugar and vanilla over a double boiler until thickened.
  5. Fold the whipped cream into the egg mixture.
  6. Pour the custard over the strawberries and smooth the top.
  7. Chill for at least 4 hours or overnight.
  8. Unmold and garnish with fresh strawberries before serving.
