Ingredients

- 2 salmon fillets (6 oz each)
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix spinach, feta, olive oil, lemon juice, garlic powder, salt, and pepper.
- Cut a pocket into each salmon fillet.
- Stuff the spinach and feta mixture into the pockets.
- Place salmon on a baking sheet lined with parchment paper.
- Bake for 20 minutes or until salmon flakes easily with a fork.

- Adjust seasoning to taste.
- Serve with a side of roasted vegetables.
