A classic sweet and creamy Amish macaroni salad with a perfect balance of flavors.
Ingredients

- 2 cups elbow macaroni
- 1/2 cup mayonnaise
- 2 tablespoons white vinegar
- 2 tablespoons sugar
- 1 teaspoon yellow mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup diced red bell pepper
- 2 hard-boiled eggs, chopped
Instructions
- Cook macaroni according to package instructions. Drain and rinse with cold water.
- In a large bowl, whisk together mayonnaise, vinegar, sugar, mustard, salt, and pepper.
- Add cooled macaroni, celery, red onion, red bell pepper, and eggs to the bowl.
- Mix well until all ingredients are evenly coated.
- Cover and refrigerate for at least 1 hour before serving.
Notes
- Adjust sugar and vinegar to taste for desired sweetness and tang.
- For extra creaminess, add more mayonnaise.
- Best served chilled.
