- 2 boneless, skinless chicken
- 1/2 cup sweet chili sauce
- 1 cup coconut milk
- 1 lime, juiced and zested
- 1 tbsp honey
- 1 tsp garlic powder
- 1 tsp ginger powder
- 1/4 tsp salt
- 2 cups cooked rice or greens
- 1/4 cup chopped cilantro
- 1/4 cup shredded coconut (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Coat chicken with sweet chili sauce and bake for 20-25 minutes until fully cooked.
- In a small saucepan, combine coconut milk, lime juice, lime zest, honey, garlic powder, ginger powder, and salt. Simmer for 5 minutes.
- Slice cooked chicken and serve over rice or greens.
- Drizzle with coconut lime sauce and garnish with cilantro and shredded coconut.
Notes
- For extra heat, add a pinch of red pepper flakes to the drizzle.
- Use light coconut milk for a lower-fat option.
