- 2 large sweet potatoes, peeled and cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1 cup vegetable broth
Instructions
- Peel and cube the sweet potatoes.
- Dice the onion and mince the garlic.
- Heat olive oil in a pan and sauté the onion and garlic until soft.
- Add sweet potatoes, salt, pepper, paprika, and cinnamon to the crockpot.
- Pour in the vegetable broth.
- Cover and cook on low for 4-5 hours or until tender.
- Serve warm.

- For a creamier texture, mash the sweet potatoes slightly before serving.
