A flavorful Tex-Mex dish with tender beef, cheese, and enchilada sauce wrapped in tortillas.
Ingredients

- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (10 oz) enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream
Instructions
- Preheat oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add diced onion and minced garlic. Cook until softened.
- Stir in taco seasoning and 1/4 cup of enchilada sauce. Simmer for 2 minutes.
- Spread a thin layer of enchilada sauce in a baking dish.
- Fill each tortilla with beef mixture and cheese, then roll tightly. Place seam-side down in the dish.
- Pour remaining sauce over enchiladas and top with remaining cheese.
- Bake for 20 minutes until cheese is melted and bubbly.
- Garnish with cilantro and serve with sour cream.
Notes
- Use corn tortillas for a gluten-free option.
- Add jalapeños for extra heat.
- Store leftovers in an airtight container for up to 3 days.
