Ingredients

  • 1 lb mixed seafood (shrimp, scallops, clams)
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 potatoes, peeled and cubed
  • 2 cups fish or vegetable broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 tsp thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook bacon in a large pot until crispy. Remove and set aside.
  2. In the same pot, sauté onion and garlic in bacon fat until soft.
  3. Add butter and flour, stir to make a roux.
  4. Pour in broth, milk, and cream. Stir until smooth.
  5. Add potatoes and thyme. Simmer until potatoes are tender.
  6. Stir in seafood and cook until just done (about 5 minutes).
  7. Season with salt and pepper. Garnish with bacon and parsley.
