Ingredients

- 1 lb mixed seafood (shrimp, scallops, clams)
- 4 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 potatoes, peeled and cubed
- 2 cups fish or vegetable broth
- 1 cup heavy cream
- 1 cup whole milk
- 2 tbsp butter
- 2 tbsp flour
- 1 tsp thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook bacon in a large pot until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic in bacon fat until soft.
- Add butter and flour, stir to make a roux.
- Pour in broth, milk, and cream. Stir until smooth.
- Add potatoes and thyme. Simmer until potatoes are tender.
- Stir in seafood and cook until just done (about 5 minutes).
- Season with salt and pepper. Garnish with bacon and parsley.

- Use fresh seafood for best flavor.
- Adjust thickness by adding more broth or cream.
- Serve with crusty bread.
