- 8 oz cremini mushrooms, sliced
- 1 medium onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp flour (optional for thickening)
Instructions
- Heat butter and olive oil in a large pot over medium heat.
- Add onions and cook until translucent, about 3 minutes.
- Stir in garlic and mushrooms, cooking until mushrooms soften (5-7 minutes).
- Sprinkle flour (if using) and stir for 1 minute.
- Pour in chicken broth and bring to a simmer.
- Add shredded chicken and thyme, simmering for 10 minutes.
- Stir in heavy cream and season with salt and pepper.
- Cook for another 5 minutes, then serve hot.
Notes
- Use pre-cooked rotisserie chicken for convenience.
- Add extra vegetables like carrots or celery if desired.
- For a thicker soup, increase flour or simmer longer.
