Ingredients

  • 2 tbsp butter

  • 8 oz asparagus, trimmed
  • 1 cup mashed potatoes
  • 2 sprigs rosemary for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season steaks with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Sear steaks for 2-3 minutes per side.
  5. Transfer skillet to the oven and cook for 5-7 minutes for medium-rare.
  6. Remove steaks and let rest.
  7. In the same skillet, add red wine, butter, garlic, and thyme. Simmer for 2 minutes.
  8. Blanch asparagus in boiling water for 2 minutes, then drain.
  9. Plate mashed potatoes, asparagus, and steak. Drizzle with red wine sauce.
  10. Garnish with rosemary.
