Ingredients

- 2 (6-8 oz) filet mignon steaks
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 cup red wine
- 2 tbsp butter
- 1 clove garlic, minced
- 1 tsp fresh thyme
- 8 oz asparagus, trimmed
- 1 cup mashed potatoes
- 2 sprigs rosemary for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Season steaks with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear steaks for 2-3 minutes per side.
- Transfer skillet to the oven and cook for 5-7 minutes for medium-rare.
- Remove steaks and let rest.
- In the same skillet, add red wine, butter, garlic, and thyme. Simmer for 2 minutes.
- Blanch asparagus in boiling water for 2 minutes, then drain.
- Plate mashed potatoes, asparagus, and steak. Drizzle with red wine sauce.
- Garnish with rosemary.

- Let steaks rest for 5 minutes before slicing.
- Use a meat thermometer for perfect doneness.
