A simple and healthy vegan raspberry chia pudding perfect for breakfast or a snack.


Ingredients

  • 2 cups almond milk (or any plant-based milk)
  • 1/2 cup chia seeds
  • 1 cup fresh or frozen raspberries
  • 2 tbsp maple syrup (or sweetener of choice)
  • 1 tsp vanilla extract

Instructions

  1. Blend raspberries until smooth.
  2. In a bowl, mix chia seeds, almond milk, maple syrup, vanilla extract, and blended raspberries.
  3. Stir well and refrigerate for at least 4 hours or overnight.
  4. Stir again before serving to break up any clumps.
  5. Top with extra raspberries or nuts if desired.
