A simple and healthy vegan raspberry chia pudding perfect for breakfast or a snack.
Ingredients

- 2 cups almond milk (or any plant-based milk)
- 1/2 cup chia seeds
- 1 cup fresh or frozen raspberries
- 2 tbsp maple syrup (or sweetener of choice)
- 1 tsp vanilla extract
Instructions
- Blend raspberries until smooth.
- In a bowl, mix chia seeds, almond milk, maple syrup, vanilla extract, and blended raspberries.
- Stir well and refrigerate for at least 4 hours or overnight.
- Stir again before serving to break up any clumps.
- Top with extra raspberries or nuts if desired.
