Ingredients

  • 1 large onion, thinly sliced
  • 1/4 cup pickling salt
  • 1 1/2 cups white vinegar
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tbsp mustard seeds
  • 1 tsp celery seeds
  • 1/2 tsp turmeric

Instructions

  1. Slice cucumbers and onion, then layer in a bowl with pickling salt. Let sit for 1 hour.
  2. Rinse and drain the vegetables well.
  3. In a saucepan, combine vinegar, sugars, mustard seeds, celery seeds, and turmeric. Bring to a boil.
  4. Add the vegetables and simmer for 5 minutes.
  5. Pack into sterilized jars and seal while hot.
  6. Process jars in boiling water for 10 minutes if canning for long-term storage.
