- 2 lbs cucumbers, thinly sliced
- 1 large onion, thinly sliced
- 1/4 cup pickling salt
- 1 1/2 cups white vinegar
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tbsp mustard seeds
- 1 tsp celery seeds
- 1/2 tsp turmeric
Instructions
- Slice cucumbers and onion, then layer in a bowl with pickling salt. Let sit for 1 hour.
- Rinse and drain the vegetables well.
- In a saucepan, combine vinegar, sugars, mustard seeds, celery seeds, and turmeric. Bring to a boil.
- Add the vegetables and simmer for 5 minutes.
- Pack into sterilized jars and seal while hot.
- Process jars in boiling water for 10 minutes if canning for long-term storage.

- Use fresh, firm cucumbers for best results.
- Adjust sugar to taste for sweeter or tangier pickles.
- Store unopened jars in a cool, dark place for up to 1 year.
