  • Salt and pepper to taste
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup shredded cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in kielbasa and cook until lightly browned.
  4. Sprinkle flour over the mixture and stir well.
  5. Slowly pour in chicken broth, stirring constantly.
  6. Add thyme, paprika, salt, and pepper.
  7. Bring to a simmer, then stir in gnocchi.
  8. Cook for 3-4 minutes until gnocchi is tender.
  9. Reduce heat and stir in heavy cream and cheddar cheese.
  10. Simmer until cheese is melted and soup is creamy.
  11. Garnish with fresh parsley before serving.
