- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 large egg
Instructions
- Preheat your oven to 400°F (200°C). Grease a muffin tin or line it with paper liners.
- In a large bowl, mix the flour, cornmeal, sugar, baking powder, and salt.
- In another bowl, whisk the milk, vegetable oil, and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 15-18 minutes or until a toothpick inserted comes out clean.
- Let the muffins cool for a few minutes before serving.
Notes
- Do not overmix the batter to keep the muffins light.
- For extra flavor, add 1/2 cup shredded cheddar cheese or diced jalapeños.
- Store leftovers in an airtight container for up to 3 days.
