Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained
  • 1 cup corn
  • 1 cup shredded cheddar cheese
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add onion, garlic, and bell pepper. Cook until softened.
  4. Stir in diced tomatoes, kidney beans, corn, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  5. Transfer the mixture to a casserole dish and top with shredded cheddar cheese.
  6. Bake for 20 minutes, or until the cheese is melted and bubbly.
  7. Serve hot.
