Ingredients

  • 2 teaspoons salt
  • 1 packet active dry yeast
  • 4 1/2 cups all-purpose flour
  • 2 tablespoons unsalted butter, melted
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg yolk, beaten
  • coarse salt for topping

Instructions

  1. In a bowl, mix water, sugar, and salt. Sprinkle yeast on top and let sit for 5 minutes.
  2. Stir in flour and melted butter until dough forms.
  3. Knead dough on a floured surface for 5 minutes until smooth.
  4. Place dough in a greased bowl, cover, and let rise for 1 hour.
  5. Preheat oven to 450°F (230°C).
  6. Boil water and baking soda in a large pot.
  7. Divide dough into 12 pieces and roll each into a rope.
  8. Shape into pretzels and dip in the boiling water for 30 seconds.
  9. Place pretzels on a baking sheet, brush with egg yolk, and sprinkle with salt.
  10. Bake for 12 minutes or until golden brown.
