- 1 cup cooked white rice
- 2 tbsp honey
- 1 tbsp chipotle peppers in adobo sauce
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken with garlic powder, salt, and black pepper.
- Cook chicken for 6-7 minutes per side until fully cooked.
- Remove chicken from skillet and let it rest for 5 minutes.
- In a small bowl, mix honey and chipotle peppers.
- Slice chicken into strips and toss with the honey chipotle sauce.
- Serve chicken over rice, garnished with cilantro and lime wedges.
Notes
- Adjust the amount of chipotle peppers for more or less heat.
- Use brown rice or quinoa for a healthier option.
