- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup buttermilk
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- Make the crumb topping: Mix flour, sugars, cinnamon, and salt in a bowl. Stir in melted butter until crumbs form.
- Make the cake: Whisk flour, baking soda, baking powder, and salt in a bowl.
- Cream butter and sugar until fluffy. Beat in egg and vanilla.
- Alternately add dry ingredients and buttermilk to the butter mixture.
- Spread batter in the pan. Sprinkle crumb topping evenly over the batter.
- Bake for 40-45 minutes or until a toothpick comes out clean.
- Cool before slicing.
Notes
- Use cold butter for a chunkier crumb texture.
- Replace buttermilk with milk + 1 tsp vinegar if needed.
- Store covered at room temperature for up to 3 days.
