Ingredients

  • 1 tbsp olive oil
  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 12 oz penne pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage and cook until browned, about 5 minutes.
  3. Stir in onion, bell pepper, and garlic. Cook for 3 minutes.
  4. Sprinkle Cajun seasoning over the mixture and stir well.
  5. Add pasta and chicken broth. Bring to a boil.
  6. Reduce heat and simmer for 12 minutes, stirring occasionally.
  7. Pour in heavy cream and Parmesan cheese. Stir until creamy.
  8. Season with salt and pepper. Serve hot.
