- 4 medium green tomatoes, sliced
- 1 cup cornmeal
- 1/2 cup flour
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg, beaten
- 1/4 cup milk
- 1/2 cup vegetable oil
- 1 cup diced tomatoes
- 1/4 cup diced red onion
- 1 tbsp chopped cilantro
- 1 tbsp lime juice
- 1/2 tsp cumin
Instructions
- Mix cornmeal, flour, smoked paprika, salt, and pepper in a bowl.
- Whisk egg and milk in another bowl.
- Dip tomato slices in egg mixture, then coat with cornmeal mixture.
- Heat oil in a skillet over medium heat.
- Fry tomato slices until golden brown, about 3 minutes per side.
- Drain on paper towels.
- Combine diced tomatoes, red onion, cilantro, lime juice, and cumin for salsa.
- Serve fried tomatoes topped with fresh salsa.
Notes
- Use firm green tomatoes for best results.
- Adjust paprika for more or less smoky flavor.
- Serve immediately for crispiness.
