  • 1/2 cup vegetable oil
  • 1 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1 tbsp chopped cilantro
  • 1 tbsp lime juice
  • 1/2 tsp cumin

Instructions

  1. Mix cornmeal, flour, smoked paprika, salt, and pepper in a bowl.
  2. Whisk egg and milk in another bowl.
  3. Dip tomato slices in egg mixture, then coat with cornmeal mixture.
  4. Heat oil in a skillet over medium heat.
  5. Fry tomato slices until golden brown, about 3 minutes per side.
  6. Drain on paper towels.
  7. Combine diced tomatoes, red onion, cilantro, lime juice, and cumin for salsa.
  8. Serve fried tomatoes topped with fresh salsa.
